Chicken and Lime Soup

1Dice onion , celery , and jalapeno (seeded and diced).onion: 1 medium, celery: 2 stalks, jalapeno: 1 medium

2Mince garlic .garlic: 4 cloves

3Cook the onion, celery, jalapeno, and garlic in olive oil over medium heat for about 5 minutes or until tender.olive oil: 2 Tbsp

4Add the chicken breast , chicken broth , diced tomatoes with chiles , oregano , and cumin to the pot.chicken breast: 12 oz, chicken broth: 6 c, diced tomatoes with chiles: 14.5 oz, oregano: 1 tsp, cumin: 1/2 Tbsp

5Bring the whole pot up to a boil over high heat.

6Reduce the heat to low.

7Place a lid on top.

8Let simmer for one hour.

9Carefully remove the chicken breast from the pot.

10Use two forks to shred the meat.

11Return the meat to the pot.

12Squeeze the juice of lime into the soup.lime: 1 medium

13Get as much juice as possible from the lime by using a spoon to scrape the inside of the lime.

14Rinse cilantro .cilantro: 1/2 bunch

15Roughly chop the cilantro leaves.

16Add the cilantro to the pot.

17Give it a quick stir.

18Serve.

19Dice avocado .avocado: 1 medium

20Add a few chunks of avocado to each bowl.
